Lemon Pound Cake

Lemon Glaze Frosting

This refreshing Lemon pound cake is truly a must to try.

2 1/2 cups flour
1 1/2 cups sugar
1/2 tsp. baking soda
1/2 cup orange juice
1/4 cup lemon juice
1/4 tsp. salt
2 1/2 tsp. baking powder
2 tsp. real vanilla
4 eggs
3/4 cup vegetable oil
1 3/4 cups powdered sugar
1/2 cup lemon juice

Preheat oven to 325 degrees . grease and flour your bundt pan, or you can use a tube cake pan. Mix together until well mixed the flour, oil, sugar, orange juice, baking powder, eggs, baking soda, salt, 1/4 cup lemon juice, and vanilla.

Pour pound cake mixture into pan and for 40-50 minutes or until dark golden brown. Let cake sit for about 10 minutes and while waiting combine powdered sugar and 1/2 cup lemon juice and hand whip(do this while the cake is still warm).

Now take the glaze and pour it over 1/2 of it over the pound cake while it is in the pain. Once it has soaked in some, then loosen pound cake, then put serving plate over the pan, and turn it over, tapping to help cake slide out. Take the rest of the glaze and pour it over the rest of the pound cake.

Can be served warm with ice cream and fresh fruit. Or you can add cream cheese to the 2nd 1/2 of the glaze. A nice and refreshing tasting cake.

    Thank you everyone for your comments and congratulations. I read and article and they wanted to know how someone gets the top 1000, I have no idea. The only thing I have that is a 1000 hits is some articles. Who knows. LOL. But, thank you anyways. Makes one want to write even more.

    Carol you are silly, do you realize how many cook books I have. I collect them and recipes. I don't think I would ever be able to complete a folder. LOL. So I will just keep adding them here and there. Hugs Mary
