Scorption's Toasty
Scorpion is one of the signature Mortal Kombat characters and his Toasty fatality is one of his signatures moves. The only thing that could possibly make burning you opponent to a crisp more fun is Dan Forden squealing "Toasty!"
Sub Zero's Deep Freezer Uppercut
Like something out of a Terminator movie Sub Zero could freeze his opponent and then perform an uppercut that would shatter his foe into a million pieces. In Mortal Kombat the little pieces don't melt and come back together though. The opponent is dead forever, or at least until next time they are the opponent.
Jax's Arm Rip
Jax gets a lot of points for ripping his opponent's arms off. He gets points taken away for not thinking to pummel his opponents with his limbs afterward like we'll see in a later fatality
The Pit
In the first Mortal Kombat game the fatality that was attempted the most had to be the pit. No matter what fighter the user chose, a certain button combination would uppercut the opponent in a way that they would fall off the ledge they were fighting on and the opponent would fall in the pit onto a plethora of spikes.
Liu Kang's Dragon
Liu Kang had one of the weakest fatalities in the first Mortal Kombat game but the developers made up for it by allowing Liu Kang to transform into a dragon and take a bite out of his opponent.
Kung Lao's Body Slice
There have been a lot of cool fatalities and other special moves in the Mortal Kombat series but as far as weapons are concerned Kung Lao's hat is second only to Scorpion's spear. Kung Lao's highlight comes when he uses his blade-tipped hat to chop his opponent in half.
Scorpion's Spear Shot
Speaking of Scorpion's spear, no Mortal Kombat list would be complete without Scorpion's spear. Usually Scorpion can insert and retract his spear with no problem but in this fatality Scorpion's spear gets stuck in his opponent's head. This results in Scorpion yanking on his spear as hard as he can and the opponent's head is ripped right off his shoulders.
Kano's Open Heart Surgery
In Indiana Jones and the Temple of Doom it took a few seconds to rip someone's heart out, which allows the opponent to escape with his heart intact. Kano on the other hand rips out a heart before the opponent even has a chance to think about it. That's the way to do it, just rip it off like a band-aid, except a lot more painful.
Quan Chi's Leg Beatdown
Most of the great Mortal Kombat Fatalities come from the original Mortal Kombat characters. One of the few exceptions is when Quan Chi decides to rip off his opponent's legs and then proceeds to beat you down with them. I can't think of anything more humiliating than being pummeled with your own legs.
Sub Zero's Spine Rip
Dragons biting off opponent's heads, arms being ripped off, hearts pulled out of their bodies, opponents being burnt to death. Mortal Kombat was a violent game from day one but the moment that every Mortal Kombat fan's head exploded was when they saw Sub Zero grab an opponent by the neck and pull off his head with his spine still attached.
