When you are looking for a cool snack, think beyond a sliced cucumber sprinkled with salt or a few pickles. There are so many more fulfilling recipes you can make using cucumbers.

For centuries, the people of North America have enjoyed the crisp, cool taste of cucumbers. I would bet even our earliest settlers enjoyed a variety of delicious cucumber dishes during harvest time. However today, the cucumber seems to be ignored, instead people reach for prepackaged and frozen treats when the need for a cold snack arises.

Cucumbers are not only delicious, but they are good for you as well. They contain vitamin C, caffeic acid, silica, potassium and magnesium. Cucumbers are also high in fiber and water, which is great for cleansing the digestive system.
