Breakfast Recipes for the Crock Pot

If you use a crock pot on Friday night, breakfast can be ready when you wake up Saturday morning. Breakfast crock pot recipes listed below are from 12-Hour Slow Cooker Recipes cookbook.

12-Hour Crock Pot Breakfast Recipes: Omelet Casserole

Ingredients:

1 lb. bacon, chopped (or substitute turkey bacon)
1 (32 oz.) bag frozen hash browns, partially thawed
½ cup diced onions
¾ lb. shredded cheddar cheese
12 eggs
1 cup milk
½ tsp. dry mustard
Salt and pepper to taste

In a medium pan over medium/high heat, cook chopped bacon until crisp. When done, place bacon on paper towels to drain.

Layer half of the partially thawed hash browns on the bottom of the crock pot. Place half of the cooked chopped bacon in a layer over hash browns. Add half of the diced onions followed by half of the shredded cheddar cheese. Repeat layers in the same order.

Use a bowl to whisk together eggs, milk, dry mustard, salt and paper. Mix well. Pour mixture over ingredients in crock pot.

Cover and cook on low setting for 10 to 12 hours. Use a spatula to remove omelet casserole from slow cooker. Serves 10.

12-Hour Crock Pot Breakfast Recipes: Sausage & Potatoes

Ingredients:

1 tablespoon of butter
1 lb. sweet Italian sausage links, cut into ½ pieces (or turkey sausage links)
1 small onion, diced
3 lbs. Yukon gold potatoes, diced
3 tablespoons maple syrup
Salt and pepper to taste

In a medium skillet over medium heat, melt butter. Add sausage pieces and sauté until partially cooked. Drain fat from skillet and place sausage in crock pot.

Add diced onion and diced potatoes to crock pot. Stir in with sausage. Drizzle maple syrup over ingredients in crock pot and sprinkle with salt and pepper to taste.

Cover and cook on low for 10 to 12 hours. If desirable, serve with scrambled eggs. Serves 10.

12-Hour Crock Pot Breakfast Recipes: Ham & Apple Breakfast

Ingredients:

1 (4 to 5 lb.) ham
5 Granny Smith apples, peeled and sliced
4 tablespoons of butter, melted
½ cup brown sugar
2 tsp. dry mustard

Place ham in center of slow cooker. Arrange sliced apples evenly around the ham. In a small bowl, combine melted butter, brown sugar, and dry mustard. Mix well and drizzle over ham and apples in slow cooker.

Cover and cook on low for 10 to 12 hours. To serve, remove ham to a serving platter. Remove apples and arrange around ham on platter. Let ham slightly cool before slicing. Serves 12.

    Have used 12-hr recipes to prepare dinner before going off to work... Honestly, never gave breakfast with it a thought! Thanks for rattling these old brains around.
