Asian Pita Sandwich
Take wheat Pita bread and spread lightly with tahini or peanut butter. Then spoon in 1 teaspoon of soy sauce and fill with grated carrot, fresh greens, thinly sliced onion and thinly sliced cucumber. Add more soy sauce is desired.
Avocado Power Lunch
Toast 2 slices of heavy nutty grain bread and spread with mayonnaise. Layer sandwich with thinly sliced ripe avocado, alfalfa sprouts, thinly sliced tomato and thinly sliced cucumber. Serve with a small bowl of black pitted olives.
Tuscany Pepper Delight
Heat good crusty Italian bread or other artisan bread in oven until nice and toasted and hot. Slice open and drizzle olive oil and sprinkle with garlic powder and grated parmesan cheese. Layer roasted red peppers and top with 2 slices of provolone cheese.
Deli Style Herbed Cream Cheese Bagel
Take 2 ounces of softened cream cheese and mix in 1/4 teaspoon of garlic powder, 1/4 teaspoon of sweet basil and 1 teaspoon of dried onion flakes and a dash of oregano. Mix well then spread over toasted bagel and top with thinly sliced tomato.
Fruity Banana Sandwich
Toast 2 slices of whole wheat bread or any multi-grain bread. Spread apricot jam on one slice and top with thinly sliced banana. Spread other slice with tahini or peanut butter and then put together and slice diagonally to eat.
Hot Mexican Wrap
Take warmed flour tortilla and spread lightly with refried beans then top with freshly chopped tomatoes and shredded pepper jack cheese and a teaspoon of sour cream. Roll tightly and enjoy.
Open Faced Cottage Cheese Bagels
Spread low fat cottage cheese on each bagel half. Sprinkle with cinnamon and nut meg and finely chopped apple or applesauce. Toast in oven and serve immediately.
Open Sesame Sandwich
Toast 2 slices of whole wheat bread and spread one slice lightly with peanut butter then sprinkle with sesame seeds. Top with bean sprouts and 1 teaspoon teriyaki sauce.
Cream Cheese Jalapeño Spread
Take 3 ounces of softened cream cheese, one seeded jalapeño pepper, 2 teaspoons of salsa, 2 tablespoons of freshly chopped tomato and mix well. Spread over flat cracker bread and sprinkle with shredded cheddar cheese.
Mock Chicken Curry Salad
Take 2 ounces of small cubed tempeh and stir in 2 tablespoons of mayonnaise, 1/4 teaspoon of curry powder. Serve on toasted wheat bread with baby spinach leaves and 4 sliced seedless green grapes. Cut sandwich in half and serve.
Creamy Caesar Sandwich
Toast 2 slices of multi-grain bread and spread each slice with Creamy Caesar salad dressing then sprinkle with grated parmesan cheese. Layer thinly sliced tomato and lettuce leaves and 2 slices of baby swiss cheese. Cut sandwich in half and serve.
Greek Style Sandwich
Heat good crusty Italian bread or other artisan bread in oven until nice and toasted and hot. Slice open and drizzle with Italian dressing and layer thinly sliced tomato, chopped black olives, lettuce and lightly sprinkle crumbled feta cheese.
Crunchy Muenster Mustard Lunch
Toast 2 slices sourdough or potato bread. Spread with honey mustard and layer with muenster cheese mixed greens and diced beets from jar or can. Cut sandwich in half and serve.
Mozzarella Meltdown
Take 2 slices it Italian bread and layer with shredded or sliced Mozzarella cheese. Toast in oven then sprinkle freshly chopped tomato and lightly spoon on 1 tablespoon of tomato sauce and sprinkle with grated parmesan cheese. Cut sandwich in half and serve with small bowl of salad greens sprinkled with Italian dressing.
