2 Quick Hot Meals for a Winter Day

Or Any Day when You Are Short on Time!

A hot, satisfying meal on a cold day just feels good! If it is quick, then it is even better. Here are two of my family's favorites (and the cook's too since they are so easy and guaranteed to satisfy all the boys in the house, no matter what the age.)

Grilled Cheese sandwiches and Hot Tomato Soup

Heat seasoned iron skillet on high (bread should not stick to skillet)

Lightly butter 2 slices of bread

Grill in hot skillet (butter side down) until lightly toasted. Reduce heat slightly.

Take 1 slice of bread and add a small amount of mustard (for spice) and 1 thick slice of Velveeta cheese to the toasted side of bread. (You "kinda" have to be quick here)

Put the other slice of bread (toasted side) to the cheese

Butter one side of sandwich and place in skillet (butter down)

Butter top side and turn when toasted

This assures that all 4 sides of the bread is buttered and toasted. It really makes a wonderful difference. Serve with hot steamy tomato soup. For richer soup just use ½ milk and ½ water. Serve sandwiches with a few dill pickle slices. Keep the skillet hot because there will be requests for more! When serving to company or several teenagers, these sandwiches are best hot so I just keep them coming until everyone yells "enough". The soup is best kept hot in a tureen on the table of just on the stove so everyone can help themselves to more. You can develop a family legacy with this one!

Beans, Franks and Cheese

The other recipe is so easy it is "sinful".

Open 4 - 15 oz. cans of Campbell pork & beans (1 can per serving) and heat on medium

Add 1 pound of frankfurters (I use turkey franks) sliced small

Cook until heated. The franks will "puff up" when hot

When hot add 4 ozs. of Velveeta cheese (cut up)

Reduce heat and stir until the cheese is melted.

My guys never wanted anything with this except bread. How easy can it get and they love this stuff! They especially love this during football season since they can take a bowl into the living room and watch the games while eating.

These are two recipes that my husband, children and now my grandchildren enjoy. I enjoy them because they are so quick and easy. Grandma's house was always known for the best of food! Yours can be too.

    Dang it! Now I have to get tomato soup. I don't do beans and franks, but beans and ham or pork roast chunks, yum!
