Recipe #1 - All Day Macaroni & Cheese
8 ounces elbow macaroni, cooked and drained
4 cups(16 ounces) shredded sharp cheddar Cheese
1 can (12 ounces) evaporated milk
1 1/2 cups milk
2 eggs
1 teaspoon salt
1/2 teaspoon black pepper
Place the cooked macaroni in crockpot that has been sprayed with nonstick cooking spray. Add the remaining ingredients, all except 1 cup of the cheese, mix well.
Sprinkle with the remaining 1 cup of cheese and then cover and cook on low setting for 5 to 6 hours or until the mixture is firm and golden around the edges. Do not remove the cover or stir until it has finished cooking.
Perfect meal for a weekday, when time is limited and you need a home cooked meal for supper. Would go great if served with a side dish such as corn, peas, or green beans. You could also add cooked hamburger to it once it's done to make a bigger dish or just to add something different. This by far is the easiest way to cook macaroni and cheese (who needs a box when you have this recipe?).
Recipe #2 - Artichoke & Cheese Dip
1 lb. shredded Mozzarella
1 c. grated Parmesan
1 c. (8 oz. jar) mayonnaise
1 c. (8 1/2 oz.) artichoke hearts, drained and chopped
Minced onions
Mix ingredients together. Bake in casserole at 350 degrees for 20-30 minutes or in lightly buttered 3 1/2 quart slow cooker/Crock Pot on (high) for about 1 hour. Serve with broken up French bread or wheat crackers. Great for appetizers or a really nice snack. I absolutely LOVE this dip! It also goes great with either homemade bread or chips.
Recipe #3 - Broccoli & Cheese Soup
2 c. cooked noodles
1 (10 oz.) pkg. frozen chopped broccoli,thawed
3 tbsp. chopped onions
2 tbsp. butter
1 tbsp. flour
2 cups shredded American cheese
Salt to taste
5 1/2 c. milk
Combine all ingredients in slow cooker. Stir well. Cook on low for 4 hours. 8 servings. Perfect as a side dish, or even as a main meal. This is my daughter's absolute favorite, and she could eat it every day. You can substitute a few of the ingredients above if need be, if you aren't fond of onions or want to use a different type of cheese for a different flavor.
