3 Easy Family Friendly Recipes for Memorial Day Grilling - Including a Mess Free Barbeque Burger

Laura Ewers
I love Memorial Day. I especially love spending time with my son and other kids around the holidays. Cooking and baking is another passion of mine. My family and I enjoy being outside and grilling during the summer like many families so here are some of my favorite recipes to make with my family that are perfect for Memorial Day grilling that doesn't involve spending all day over the grill.

Breakfast on the grill (makes 4 servings)

1 can (8 oz.) pineapple chunks in juice - (reserve 2 tablespoons of juice)
3 cups cubed French bread (about 1 inch size cubes)
¼ cup melted butter
1/3 cup sugar
1½ teaspoons ground cinnamon
8 slices Canadian bacon quartered

Drain pineapple, saving 2 tablespoons of juice. Set both aside. Place bread cubes in a large bowl and pour in butter and toss to coat. Combine cinnamon and sugar then sprinkle over bread mixture. Put bread mixture onto a heavy- duty foil tow layers thick (about 28 in by 18 inches in size). Add Canadian bacon and pineapple then drizzle with left saved pineapple juice. Fold the foil around the mixture and seal tightly. Grill cover over medium heat for about 4-5 minutes on each side or till heated through. Be very careful opening and allow steam to escape. Then enjoy!

Mess Free Barbeque Burgers (makes 4 servings - ¼ lb burgers)

1 lb Ground beef
1/3 cup Barbeque sauce (recommends Sweet Baby Rays)
4 slices of cheddar cheese
Desired toppings (onion, tomatoes, pickles, lettuce)

Take the ground beef and place in a bowl and add the barbeque sauce. Mix well and then form into patties. Place on grill. Grill to desired doneness. Place cheddar cheese on to melt. Top with favorite toppings. Enjoy a delicious barbeque flavored burger without all the mess of topping it with barbeque or grilling barbeque on it.

Grilled Banana Boats (makes 4 servings)

4 medium unpeeled ripe bananas
4 teaspoons mini chocolate chips
4 tablespoons mini marshmallows

Cut banana peels lengthwise (from top to bottom) about ½ inch deep. Leaving ½ inch at both ends. Open peel wider to form a pocket in the bananas. Fill each banana with chocolate chips and marshmallows. Wrap bananas in heavy-duty foil (about 12 inches square - 1 for each). Grill covered on medium heat for about 5-10 minutes or until marshmallows are melted and golden brown. Allow to cool and enjoy!

These are my 3 favorite easy family friendly recipes that my family makes for Memorial Day that allow us to spend time together enjoying the fresh air and the wonderful smell of grilling. I hope your family gets a chance to try these recipes this Memorial Day and for you to make them a family tradition.
