3 Easy Sweet Potato Recipes

Baked Sweet Potatoes

This is the easiest and most basic way to prepare a sweet potato, and in my opinion, one of the most delicious.

Ingredients:
one sweet potato for each person
butter or margarine, optional

Directions:
Thoroughly wash and dry sweet potato(s).
Wrap in aluminum foil and poke a fork about a half inch into the sweet potato in several places.
Bake in a 350 degree oven for an hour and a half to two hours, depending on the size of the sweet potato.
Sweet potatoes are done when a fork easily goes through to the center.
Serve hot with butter, if desired.

Tips:
Sweet potatoes take longer to bake than regular potatoes.
Sweet potatoes are a mess when they bake because the sugary juices ooze out and drip all over the place. I like to put the wrapped sweet potatoes on a foil lined cookie sheet to catch the drips. When they come out of the oven, take the foil off the sheet and throw it away for easy clean up.

Twice Baked Sweet Potatoes

These look and taste like they're really hard to make, but they're really easy!

Ingredients:
6 sweet potatoes
1 small can crushed pineapple, drained
2 big spoonfuls of brown sugar
marshmallows

Directions:
Start by baking sweet potatoes according to the directions above.
When the sweet potatoes come out of the oven, cut them in half the long way and scoop the insides into a mixing bowl.
Add the pineapple and brown sugar and whip it up with an electric mixer, then scoop it back into the sweet potato skins.
Top with marshmallows and put them back in the oven until golden brown.

Tips:
You can tell I made up this recipe because nothing's really exact, so use whatever amounts you want and if other spices like cinnamon or nutmeg sound good to you, go for it!

Mashed Sweet Potatoes

These are such a treat! Kids really like them- as long as you don't tell them the ingredients.

Ingredients:
10 sweet potatoes
2 apples
1 cup milk
1 cup maple syrup
2 tablespoons butter

Wash, peel, and cube sweet potatoes.
Wash, peel, core, and cube apples.
Put sweet potatoes and apples in a pot of water and boil them until fork tender. Drain and transfer to a mixing bowl.
Add butter, half the milk, half the maple syrup, and whip with an electric mixer. Once everything's mixed in, add the rest of the milk and maple syrup and continue whipping.

Tips:
You can keep the mashed sweet potatoes in a covered dish in a 200 degree oven to keep the warm while you're making other dishes.
