30 Minute Meat and Bean Chili

Ingredients

Serves 6
1-1.5lbs ground beef and/or pork sausage
1/2 cup yellow onion, diced
1/4 cup green bell pepper, diced
2-3 cloves garlic
2 14.5 oz can diced tomatoes
2 8oz can tomato sauce
1 15oz can kidney beans, drained
1 15oz can black beans, drained
1 15oz can white beans, drained
1/4 cup frozen corn
1tsp dried basil
2-3tsp chili powder
1/2tsp cumin
garnishes cheese and green or red onion

Directions for 30 Minute Meat and Bean Chili

Add oil to pot and add meat, breaking it up into pieces while it cooks. When it is almost cooked through, add onions and peppers. When vegetables begin to look transluscent, add the garlic and stir for a minute, careful not to overcook the garlic.

Add diced tomatoes, tomato sauce, and all drained beans to the meat mixture and stir well. Add the basil, chili powder and cumin. Add frozen corn and let chili simmer on stove for at least 10min until ready to eat! This chili is ready to eat once the corn has thawed but as with all casserole-like dishes, the longer you let it simmer, the better the flavors blend.
Tip
If you want it spicy, add a few dashes of hot sauce such as Tobasco or Frank's Red Hot.
