4 Great Ways to Use Leftover Corn

Many would agree that corn is one of the greatest late summertime and early fall treats. Whether you place it on the grill, boil in in water, or shuck the kernels loose, it is still definitely delicious. To keep from wasting this yummy food, here are four great ways to use leftover corn.

Fried Corn Fritters

Southern barbeque joints and local households have been making fried corn fritters for centuries. Now, you can use that leftover corn to make your own! Mix together 1 cup sifted all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon salt, and 1/4 teaspoon white sugar. Beat together 1 egg and ''½ cup milk. Add the milk and egg mixture to the dry ingredients, stirring well. Fold in the leftover corn kernels to the mixture. Drop by spoonful portions into a pan of hot oil and cook until golden brown. Yum!

Cheesy Corn Chowder

One a chilly early autumn day, this cheesy corn chowder is not to be missed! Spray the inside of a slow cooker with cooking spray to make cleanup easier. Add in the leftover corn, 6 ounces Velveeta cheese, 6 bacon strips that have been diced, 5 cups milk, 2 cups water, and salt/pepper spices to taste. Add in potatoes, carrots, onion, or whatever other vegetables you desire. Cook on low for five to six hours.

Sweet Corn Pudding

When most people consider using leftover corn, they often overlook dessert ideas. However, sweet corn pudding can be quite delicious if done right. Place the leftover corn kernels and 1/2 cup of milk in a food processor. Blend until they become a puree. Transfer the puree into a sauce pan and add 3/4 cup white sugar, 2 additional cups of milk, 1 tablespoon vanilla, and cinnamon to taste. Boil on medium high heat, stirring constantly. Once a rapid boil begins, reduce the heat to low and stir constantly for ten minutes. Pour the pudding into serving dishes and allow it to cool completely while in the refrigerator. Top with a dollop of whipped cream.

Corn Salsa

Leftover whole kernel corn is also great for making a fantastic salsa! To do this, you will need two cans diced tomatoes with green chilis (in certain areas, known as Rotel). Mix the corn with the Rotel in a large bowl. Jalapeno peppers or other spicy peppers can also be added to the mixture to give it extra kick. Refrigerate until cold and serve with chips.
