4-Ingredient Mexican Recipes for Cinco De Mayo

Cinco de Mayo, May 5 celebrates the Mexican Independence Day. Here are some fast, easy four ingredient recipes for your home or classroom to celebrate Cinco de Mayo.

Speedy Burritos (serves 4-6)

1 package frozen Burritos (we like chicken and rice best)
24 oz. jar of salsa
8 oz. shredded cheese
leaf or romaine lettuce
sour cream (optional)

Spray 9x13 baking dish with cooking spray. Arrange frozen burritos in pan in a single layer. Pour salsa over burritos. Rinse jar and add about half of rinse water. Cover with foil. Bake at 350 degrees for 30 minutes. Top with cheese and bake until cheese is melted. Serve on lettuce topped with sour cream.

Spanish Rice:

cooked rice (1 cup dry equals three cups cooked)
jar of salsa (16 oz. jar)
chicken broth
4 Cheese Mexican shredded cheese

Cook the rice. Add salsa in equal parts to rice. Blend in chicken broth. Heat thoroughly. Top with shredded cheese.

Tortilla Soup: (serves 4-6)

baked tortilla chips
canned or cooked chicken breast (12 oz. can or two chicken breasts)
salsa (16 oz jar)
cheese
Optional: green or black olives, can of corn, fresh chopped colored peppers, cooked onions)

Combine cooked chicken, salsa (rinse water from jar and add to soup), any of the optional items and simmer until heated. Crumble chips in bowl; pour soup over top and sprinkle shredded cheese over the top.

Chili Verde (serves 4-6)

one can green chilies
salsa or chopped tomatoes
chicken broth
can of cheese soup
(optional: can of cooked chicken)

Combine all ingredients (rinsing all jars and cans and adding water). Simmer until blended and heated.

Veggie and Bean dip

refried beans
bagged lettuce salad (with shredded carrots and purple cabbage)
fresh chopped tomatoes
shredded cheese
tortilla chips
(optional: sour cream, chopped onions, black olives, green olives, salsa)

Layer first four ingredients, plus any optional ingredients. Top with cheese. Serve as dip with tortilla chips.

Citrus Slush : Oranges, limes, lemons and limes are native to Mexico. Celebrate with this refreshing punch.

one can lemonade (plus one can water)
one can limeade (plus one can water)
one can orange juice (plus one can water)
soda water or Squirt soda
ice with cherries frozen into cube (place one maraschino cherry into each ice cube, use water or Squirt for ice)

Blend all ingredients and partially freeze to slush. Serve from ice bucket or cooler to stay slushy. Serve with ice cube.

Stuffed Avocados:

Whole avocado
Chili powder
Salsa
Low fat cream cheese or cottage cheese

Slice avocado lengthwise. Use spoon to carefully remove pit. Blend last three ingredients until smooth. Scoop filling into center of avocado P(are down the sides to enlarge slightly and add parings to filling if desired.)
