This Fourth of July dessert is best when refrigerated. Because of the yogurt filling, it also should not be left out in the heat too long.

The fruits in this Fourth of July recipes are blue blueberries and red strawberries. The listed amounts are for the filling. Save some to decorate the plate when you serve this dessert on the Fourth of July, to add patriotic colors to the roulade.
3 large eggs
1 cup super fine white sugar
1 cup flour
1 tbspn water
non-stick spray
Filling:
3/4 cup low-fat yogurt
1 tspn almond extract
1/2 tspn Pure vanilla extract
1 tspn lemon extract (optional)
1 cup fresh slice strawberries
1/4 cup fresh blueberries (cut in half if small children will be eating this dessert)
2 tbspns slivered almonds
1 teaspoon powdered sugar
Preparation for the Fourth of July Festive Blueberry-Strawberry Roulade
Before making this healthy dessert, preheat the oven to 425 degrees. If it's hot or your house is without air conditioning, do this part in the evening.
To make this 4th of July healthy dessert you will need to gather the following cooking supplies, in addition to the ingredients above:
2 large nesting bowls or one bowls and one pan large enough to fit the mixing bowl
1 mixer
1 10x14 jelly roll pan or shallow baking dish
1 whisk
parchment paper
one long or narrow serving platter or dish
1 clean dish towel
Place a large piece of parchment paper on the counter.

First, make the dessert pastry for the 4th of July Healthy Dessert. Combine the three eggs, one cup of sugar in the bowl.
In the larger bowl or pan, add hot water. Place the smaller bowl on top of that. Use the whisk to mix the eggs and sugar. The mixture will thicken.
Next, take the mixing bowl out of the hot water and set it on the counter or table. Slowly sift the flour into the egg and sugar mixture. Also add 1 tbspn hot water. Optional: add one teaspoon lemon extract.
Once all of those ingredients are mixed, pour the batter into a pan sprayed with a natural cooking spray like Wesson Pure
Bake for 8 to 10 minutes. The pastry will be a lovely golden yellow color.
Next, carefully remove the dessert pastry from the pan, while it is still warm. Place the flat sponge pastry on the parchment paper. Use the parchment paper to roll up the pastry.
Wrap the pastry in a clean dish towel and let it cool.

The filling can be made the day of the Fourth of July picnic. Do not add the filling until just before serving, though.
Combine the non-fat plain yogurt with the Add the almond extract and vanilla extract. Chill the filling mixture, and let the flavors mingle.
To serve, unroll the pastry onto a flat surface. Spread the yogurt mixture onto the surface of the pastry. Next, add the strawberries, covering the service. Place the blueberries in between the strawberries, to fill any holes.
Remember to save some fruit for garnish.
Finally, re-roll the pastry. Top with slivered almonds, and the remaining fruit. Sprinkle with the powerderd sugar. Serve cold on the Fourth of July or other summertime holiday and enjoy.
