In today's hard economic times feeding a family can take quite a chunk out of your income. Cooking cheap and easy meals can help that food budget. Below you find cheap and easy meal recipes that taste great and also leave a little money in your pocket.

Pork Chop Casserole

6-8 Pork Chops (I prefer boneless pork loin)

1 diced green pepper

1 diced onion

8-10 peeled and chopped potatoes

2 cans mushroom soup

1 cup water

Lay the pork chops in a single layer in a deep baking pan. Salt and pepper the chops to taste. Lay the vegetables on top of the chops. Add a little more salt and pepper if you desire. In a bowl mix the mushroom soup and water and pour on top of the chops and vegetables. Cover with tinfoil and put 350 degree pre-heated oven for one hour to an hour and a half. Casserole is done when the vegetables are tender. Great served with cornbread and a salad.

Pork and Bean Casserole

2 cans pork and beans

1 small diced onion

½ lb ground beef

In a skillet crumble and fry the ground beef. In a pot put the pork and beans, onions and ground beef. Cook until onions are tender. Great served with fried potatoes.

Potato Casserole

6-8 sliced potatoes

½ ground beef

1 diced onion

1 can mushroom soup

Fry the potatoes and onions in a skillet in a separate pan crumble and fry the ground beef. When the potatoes are almost done put the round beef, mush room soup and water over the potatoes. Stir until mushroom soup is well mixed into the potatoes. Cook until potatoes are completely done.

Cheeseburger Casserole

2 boxes macaroni and cheese

1 lb ground beef.

1 diced onion

Cook macaroni by directions on box. In a separate pan crumble and fry the ground beef and onion. When the macaroni is done follow directions on box to add the cheese. Put the ground beef and onion in the macaroni and stir well.

For a cheap and easy desert try the following:

Fruit Mix

1 can fruit cocktail

1 can pineapple

1 can Eagle brand Milk

1 tub Cool whip

Mix above ingredients in a bowl and chill.

All of these recipes are cheap and easy to make. They are delicious. My family loves each of these recipes and I am sure your's will also.
