Cranberry White Chocolate Oatmeal Cookies

30 cookies

22 min 10 min prep

2/3 cup butter or margarine
2/3 cup brown sugar
2 large eggs
1 1/2 cups old fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 (6 ounce) package Craisins
2/3 cup white chocolate chunks

Beat butter (or margarine) and sugar in medium-sized mixing bowl until well mixed and fluffy.
Add eggs, mix well.
Combine oats, flour, baking soda, and salt in a separate large-sized mixing bowl.
Add butter mixture, a little at a time, mixing well.
Stir in craisins and white chocolate chunks.
Place rounded teaspoons of dough onto ungreased cookie sheet(s).
Bake 10-12 minutes, or until golden brown, in preheated 375 degree oven.
Cool on rack.

Cranberry Chocolate Coconut Granola Bar

4 cups old fashioned oats
2 cups flour
1 cup coconut
1/4 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup applesauce
3/4 cup honey
1 cup chocolate chips
1/2 cup craisins

Combine dry ingredients in large-sized mixing bowl, mix well.
Add applesauce and honey, mix well.
Add craisins and chocolate chips, mix well.
Firmly press into 13x9 baking pan.
Bake 20 minutes in preheated 375 degree oven. They will look puffy and soft when you take them out.
Cut into squares while still warm.

Cranberry Pecan Cream Cheese Spread

6-8 servings

1¼ hours 10 min prep

1 (8 ounce) package cream cheese
1/4 cup orange juice
1/2 cup craisins
1/2 cup pecans, chopped

Beat cream cheese and orange juice in a small-sized mixing bowl until smooth.
Fold in craisins and pecans.
Cover and refrigerate for at least 1 hour.
Serve with your favorite thin crackers.

Cranberry Banana Bisquick Bread

1 loaf

1¼ hours 10 min prep

2 cups Bisquick baking mix
1 cup sugar
1/2 cup butter, softened
2 eggs
2 bananas, ripe
1/2 cup craisins

Beat butter and sugar in medium-sized mixing bowl until well mixed and fluffy.
Add eggs, mix well.
Add Bisquick and bananas, mix well.
Fold in craisins.
Pour batter into a greased and floured bread pan.
Bake for 1 hour, or until inserted toothpick comes out clean, in preheated 350 degree oven.

Cranberry Maple Popcorn Balls

12 servings

20 min 15 min prep

8 cups plain popped popcorn, remove unpopped kernels
1 cup craisins
1/2 cup brown sugar
1/2 cup maple syrup
3 tablespoons butter or margarine

Place popcorn and craisins in a large-sized mixing bowl, set aside.
Combine brown sugar and maple syrup in a small saucepan; add butter.
Cook over medium heat, until butter melts and mixture comes to a boil, stirring often.
Cooke for about 4 minutes, or until mixture thickens slightly, stirring frequently.
Pour over popcorn mixture, stirring until coated.
Dip hands in cold water.
Shape popcorn mixture into 2-inch ball, pressing firmly to hold shape.
Place on waxed paper, cool completely.
Let stand overnight to harden.
Wrap in decorative plastic wrap for an easy Christmas gift.
