5 Easy Chuck Roast Recipes for the Crock Pot

The following are what I call "folksy" chuck roast recipes- easy, inexpensive, and delicious! Every measurement is "to taste". If you don't have a crock pot, you can use a covered roasting pan in a 225 degree oven.

Yankee Chuck Roast Recipe

4 lb chuck roast
1 package dry Lipton Onion Soup Mix
Onions
Potatoes
Carrots
Water

Put about 3/4 inch of water in crock pot, add chuck roast and sprinkle dry soup mix over everything. Peel onions and potatoes, slice into eighths, and add to crock pot. Peel carrots, cut into two inch pieces, and add to pot. Cover and cook on low for approximately eight hours.

(Use your own judgment as to how may onions, potatoes and carrots your family will eat. I usually use 2 onions, 6 potatoes, and 1 pound of carrots.)

Asian Chuck Roast Recipe

Chuck roast
Ground ginger
Minced garlic
Water

Put about 3/4 inch of water in crock pot, add chuck roast. Sprinkle powdered ginger and minced garlic over the meat. Cover and cook on low for approximately eight hours. Serve with rice and Hong Kong vegetable mix.

Mexican Chuck Roast Recipe

Chuck roast
1 package dry taco seasoning
2 green peppers
1 onion
Water

Put about 3/4 inch of water in crock pot, add chuck roast. Sprinkle all the taco seasoning over the meat and cover with thinly sliced green pepper and onion. Cover and cook on low for approximately eight hours. When it's done, remove any fat and shred meat using two forks. Serve on tortillas with taco toppings such as salsa, sour cream. lettuce, shredded cheese, and diced tomatoes.

Barbecue Beef Recipe

Chuck roast
Garlic
Water
Barbecue sauce

Put about 3/4 inch of water in crock pot, add chuck roast and sprinkle a scant amount of minced garlic over meat. Cover and cook on low for approximately eight hours. When it's done, remove any fat and shred meat using two forks, then add a bottle of your favorite barbecue sauce and mix well. (I like Kraft Honey Barbecue Sauce the best.) Serve barbecue beef on Kaiser rolls, with corn on the cob and cole slaw on the side.

Sunday Chuck Roast Recipe

Chuck roast
2 cubes beef bouillon
Garlic and onion, optional

Put about 3/4 inch of water in crock pot and dissolve bouillon in it. Add chuck roast and cover with garlic and onions, if desired. Cover and cook on low for approximately eight hours. Serve with mashed potatoes, gravy (made from the au jus in the crock pot), tossed salad or hot vegetable.
