5 Great Barbecue Recipes for Vegetarians

Barbequing can be a tricky thing especially if you are a Vegetarian. My sister and I have learned that Barbecues can still be delicious even if you are a vegetarian. There are many creative recipes that cater to vegetarian barbecue cooking. The tricky thing with Vegetarian Barbecue is that there is no meat in any dishes, and in some cases ingredients like barbecue sauce, mayonnaise, eggs, cheese, or diary items can not be used. My sister and I have created our own favorite dishes that are easy, quick, and very vegetarian friendly. These are my personal 5 favorite Vegetarian Barbecue recipes.

Teriyaki Grilled Eggplant, Portobello Mushroom, and Pineapple Sandwich


Ingredients:

1 Large Eggplant

4-8 Portobello Mushrooms

1 Fresh Pineapple or Canned Pineapple

Cheddar or Swiss Chess (Optional)

Teriyaki sauce

Pepper and Salt

Burger Buns or Any Bread of your choice

1.) Wash Eggplant and Mushrooms

2.) Cut Eggplant in circle rounds

3.) Cut the stem of the Mushrooms off but leave as whole round

4.) Cut up Pineapple into rounds

5.) Brush teriyaki sauce on both eggplant rounds, mushroom rounds, and if you want the pineapple

6.) Sprinkle pepper and salt on both sides of eggplant and mushroom

7.) Place Eggplant and mushroom rounds on grill

8.) Grill Eggplant and mushroom 10-20 Minutes or however you like them ( I like my eggplant soft so I cook them a little longer)

9.) Mushrooms will be done sooner then Eggplant so you may want to take them off first

10.) Before taking eggplant off grill put chess on eggplant rounds (optional)

11.) Put Pineapple rounds on grill for 5 minutes (optional)

12.)Place Mushroom round, eggplant round, and pineapple round together on burger bun. (For vegans you can use eggplant rounds as buns and put mushroom and pineapple in between.

13.) Add lettuce, onions, tomatoes, and other condiments if you choose (Optional)

14.) Enjoy!

Italian Potato and Vegetable Kabobs


Ingredients

Potatoes (As many as you like)

Onions

Bell Peppers

1 Lemon

Italian dressing

Skewers

1.) Cut Potatoes in rounds then in halves

2.) Cut onions and bell peppers

3.) Put veggies in bowl, squeeze lemon in, and mix in ½-1 cup Italian dressing

4.) Put veggies on skewer

5.) Grill 20-30 minutes or until potatoes are done

6.) Serve!

Tofu and roasted garlic Burgers


Ingredients

Soft Tofu

Fresh Garlic Cloves

Olive Oil

Onions

Green Onions

Mushrooms

Eggplant

Breadcrumbs

1 egg (Optional)

Burger Buns

1.) Get whole garlic cloves and cut the tops in a slanted direction

2.) Get glass oven bowl or tray

3.) Drizzle olive oil on bottom of bowl and tom of garlic cloves

4.) Put in oven at 400 degrees for 30-40 minutes or until garlic is soft

5.) Cut onions, green onions, mushrooms, eggplant

6.) Put veggies in large mixing bowl

7.) Put soft tofu in bowl with veggies

8.) Add cup of breadcrumbs (optional for vegans)

9.) Add one egg (Optional)

10.)Mix all ingredients until all together

11.) Shape into round burgers

12.) Place on grill for 20-25 minutes or until browned

13.)Place on bun

14.)Add lettuce, onions, tomatoes, and condiments (optional)

15.)Enjoy!

Italian and Honey Mustard Tofu Steak and Grilled Asparagus


Ingredients

Italian Dressing

Honey Mustard

Firm Tofu

Asparagus

1.) Put 1 cup Italian dressing, and 1 Cup of Honey Mustard in medium mixing bowl

2.) Cut Firm Tofu into 1-2 inch width rectangular shape pieces

3.) Dunk Firm Tofu pieces into Italian and honey mustard sauce

4.) Place on grill for 10-15 minutes

5.) Put remaining honey mustard and Italian dressing on Asparagus

6.) And Put Asparagus on Grill for 10-15 minutes

7.) Enjoy!

Italian Grilled Stuffed bell peppers


Ingredients

Bell Peppers

Squash

White Corn on the Cob

Tomatoes

1 Cup of Jasmine Rice

½ Cup Italian dressing

Salt and Pepper

Onions

1.) Take Bell peppers

2.) Cute top off bell peppers

3.) Deseed Bell peppers

4.) Cut corn off cob

5.) Cut tomato, and onions

6.) Get pan and place on stove at low heat

7.) Put in cute veggies on pan for 5 minutes

8.) Take veggies and put in large mixing bowl

9.) Cook Rice

10.) Put Rice in mixing bowl with veggies

11.) Put ½ cup of Italian dressing in mixing bowl

12.)Add salt and pepper

13.) Stuff bell peppers with the mixture

14.)Grill Stuff Peppers for 14-20 or until brown

15.) Enjoy!
