Mexican Food Recipes - Main Dishes
Chicken Enchiladas
From my sister-in-law (unknown source of where she got it from)
2 pounds of grated cheddar cheese
2 cans of cream of chicken soup
1 can of chopped green chilies
8 ounce package of sour cream
1 chicken cooked and boned
1 package of corn tortillas (12 count)
Put the cream of chicken soup, sour cream, and half of the green chilies in a pan and heat. In a skillet, put oil and cook tortillas until soft, then salt them. Fill tortillas with about three-fourths of the cheese, chicken, and the rest of the green chilies and roll them up. Place in a 9x13 inch pan and cover with soup mixture. Heat until hot through, about 30 minutes in a 350-degree oven. Sprinkle the rest of the cheese on top and melt.
Dorito Casserole
From my mother who got it from a friend
1 package of Doritos (plain)
1 pound of hamburger meat
1 onion chopped
2 cans of mushroom soup
1 can of water
1 cup of grated cheese
1 can of Rotel tomatoes
1 can of Ranch Style Beans (optional)
1 can of sliced Black Olives (optional)
Bring soup, water, and tomatoes to boil. NOTE: If you are using the ranch style beans, place them in with the soup, water and tomatoes.
Cook the hamburger meat to brown with the onion.
Place a layer of Doritos into a casserole dish slightly crushed. Place a layer of the hamburger and onion mixture next, then a layer of the soup mixture. NOTE: The black olives will be placed next if you are using them in this casserole. Continue until you have used all the ingredients.
Top with cheese and bake in a 350-degree oven until cheese is melted.

Mexican Food Recipes - Side Dishes
Spanish Rice
From my aunt who lives in California.
2 Tablespoons of olive oil
2 Cloves of peeled and minced garlic
2 Cups of long grain white rice
3 2/3 cups of water
1/3 cup of tomato paste
1 teaspoon of salt
1 cup of diced corn or carrots (she suggests using corn as it is the best)
1 cup of black olives
Pinch of saffron threads (optional)
In a large pan, heat oil. Add the garlic and rice, stirring constantly. Brown the rice until golden. Add water and tomato paste, stir. Bring to a brisk boil for five minutes. Add the vegetables. Bring to a boil once more. Cover and boil five minutes more. Remove from heat and allow to rest, covered for 30 minutes. Fluff with fork and serve with meats, enchiladas, burritos, etc. Serves 6.
