5 Recipes Using Boiled Eggs

Sally Albright
Boiled eggs are easy to make and are a great protein-filled snack food. Boiled eggs can taste great with just a simple sprinkling of salt and pepper. Boiled eggs also make a wonderful ingredient in many different tasty recipes. Here are just 5 recipes that use boiled eggs as one of the main ingredients.

Egg Salad Sandwiches

Egg Salad Sandwiches are quick and easy to make. These sandwiches are great when served for lunch. To make a simple Egg Salad Sandwich you only need chopped boiled eggs, mayonnaise, and mustard. Mix in enough mayonnaise to fully moistened the chopped boiled eggs along with a bit of mustard for added flavor. Some people enjoy chopped olives, onions, or chopped pickle in their Egg Salad Sandwich, what you add is up to you.

Deviled Eggs

My family loves deviled eggs even in the winter. Deviled eggs are easy to make and are a tasty appetizer. For my deviled eggs I typically use mayonnaise, mustard, and vinegar along with the boiled eggs. Simply slice each egg in half, scooping the yolk into a bowl. Mash the yolks with a fork until finely grated. Next add enough mayonnaise to moisten the yolks along with a bit of mustard and a splash or two of vinegar and stir. Scoop the egg yolk mixture back into the egg whites and sprinkle with paprika, if desired. You may serve these at room temperature or chill them in the fridge for a few hours before serving.

Stuffing

Stuffing is fun to experiment with, adding different ingredients to make the stuffing your own. One ingredient that makes a great addition to stuffing is a chopped boiled egg. You can also add in some browned breakfast sausage for even more protein and flavor. Bake the stuffing inside of your turkey or chicken just like you would with other stuffing recipes.

Potato Salad

Potato salad is more than just potatoes. The addition of chopped boiled eggs gives the traditional cold potato salad some added flavor and as well as a boost of protein. For an easy potato salad, using boiled eggs, simply boil then peel six medium sized potatoes. Chop the potatoes and place them in a bowl along with six chopped boiled eggs, celery, and onions. Moisten the mixture with mayonnaise and add a bit of mustard for flavor, if desired. You can use a Dijon mustard or a honey mustard to make things interesting.

Ham and Egg Salad

This is yet another salad recipe which uses boiled eggs. To make a ham and egg salad you need some bagged salad mix or chopped lettuce that has been placed in a bowl, adding other salad vegetables as desired. Top the salad mix or lettuce with shredded cheddar cheese, cubed ham (or strips), and strips of boiled eggs. This salad is a great way to get your veggies and your protein as well. Strips of boiled eggs also make a great topper for other salads, making them more filling and tastier.

These recipes which use boiled eggs can help you to use up those leftover boiled eggs like the ones you may have laying around in your fridge after Easter. Rather then letting them go to waste why not try one of the tasty ideas above?
