5 Ways to Eat Beets

Britt Baker
There are many ways to eat beets - the tasty, reddish hued root vegetables - and to take advantage of the many health benefits of eating beets. Beets are rich in a number of nutrients, including folate, manganese, and potassium, and although beets have the highest sugar content of any vegetable, they are still surprisingly low in calories. There are a number of ways to eat beets and to gain from their nutritional value. Here are 5 ways to eat beets:

1. Pickled. Pickled beets are one the most popular ways to eat beets, and this is a very easy way to eat them, as well. You can easily find pickled beets at your grocery store, or you can can your own pickled beets at home. The sweetness of beets merged with the vinegar used to pickle the beets makes for a very tasty snack or side at dinner or lunchtime.

2. Raw. You can eat beets raw, even though, many people prefer them cooked. To try this way to eat beets, simply grate the beets (and add sugar and salt, if you'd like). Then, you can top some leafy greens with the grated beets to add a little more flavor to a salad.

3. Roasted. There are many ways you can roast beets, like in a pan with oil or wrapped in foil. You can roast your beets with spices, such as dill or ginger. Orange juice is another popular addition to roasting beets. Many people enjoy eating their roasted beets with blue cheese or goat cheese and nuts, such as walnuts or hazelnuts.

4. Grilled. Grilled beets are a delicious summertime dish. There are many styles of grilling beets, such as marinating the beets in balsamic vinegar and spices before grilling them or drizzling grilled beets with hazelnut or walnut oil.

5. Sauteed Greens. Along with the beetroot, you can also eat the greens of the beet. A great way to eat beet greens is by sauteeing them in a skillet with oil, vinegar, onions, garlic, and your choice of spices.

I love beetroot and will quite happily eat away until it's gone. I like them boiled the best and added to salad while they are still hot.
