The Babylonians might have been the first to ferment vinegar from date palms, and this was over 5,000 years ago! But in order to give it flavor, they added items like saffron, mint, lavender, tarragon, celery, absinthe, Ruta and portulaca..

The first bottled vinegar came about in 1880 by Heinz, and even though its main ingredient is alcohol, Heinz vinegar is made from either apples or corn that has been ripened by the sun, and does not contain any preservatives or additives.

Apple cider vinegar of course is made from apple juice that has been diluted with water. And the distilled white vinegar is made from the best grains that have been sun-ripened, and is also diluted with water. The dilution in both vinegars form an even strength that is 5 % acidity, which is suitable for the table and for pickling.
