8 Vegetarian Thanksgiving Recipes

On Thanksgiving everyone says what they are thankful for and then usually feast. The main food for thanksgiving usually involves Turkey and side dishes made with meat, or have turkey gravy in it. However not everyone eats meat. In my family, some of us are vegetarians and some of us eat meat. The great thing about my family's vegetarian thanksgiving recipes are that they are still very yummy and definitely ring out thanksgiving. Here are 8 Vegetarian Thanksgiving Recipes for you to try.

#8 Roasted Garlic Mashed Potatoes and red wine veggie gravy

Ingredients: 4-5 red potatoes, 2-3 brown potatoes, 2-3 garlic gloves , 2-3 table spoons of olive oil, 5-6 cups of water, 1 teaspoon salt, 1 teaspoon pepper, 2 table spoons of vegetable butter (optional), ½ cup of milk or soymilk, 2 cans of vegetable broth, 1 cup of cooking red wine or real red wine, 3-4 table spoons flour

Mashed Potatoes:

1. Peel all red and brown potatoes (optional)

2. boil 5-6 cups of water in pot, put potatoes in for boil 30 -40 minutes or until soft

3. Get a oven tray and drizzle 2 table spoons of olive oil

4. Take whole garlic gloves and cut the tops off

5. Drizzle 1 table spoon of olive oil on each garlic glove

6. Put garlic cloves on oven tray

7. Put in oven at 350 degrees for about 30-40 minutes until garlic is soft

8. Drain water out of potatoes, and mash (put in blender optional)

9. Put mashed potatoes back in empty pot

10. Add pepper, salt, butter, milk or soymilk

11. Take garlic out of oven and peel

12. Put roasted garlic pieces into mash potatoes and mix

13. Mix mash potatoes until it is the right consistency to your liking

14. Serve

Gravy:

1. Open cans of vegetable broth and bowl

2. Add one cup of red wine or cooking wine

3. Add 3-4 table spoons of flour or until you have the thickness you like

4. Add salt and pepper (optional)

5. Serve with mash potatoes

# 7 Herbal Tofu-furkey Loaf

Ingredients: soft tofu, 1 onion, 2 celery, 1 carrot, 1 portabella mushroom, 1 table spoon of rosemary, 1-2 pieces of garlic, 1 teaspoon salt, 1 teaspoon pepper, 2 bay leaf, 2 teaspoon of lemon juice, 2 cups of bread crumbs (optional)

Herbal Tofu-furkey loaf preparation:

1. Chop up all vegetables: onion, celery, carrot, portabella mushroom, and garlic

2. Put chop vegetables in mixing bowl with tofu

3. In mixing bowl add pepper, salt, bay leaf, lemon juice, and bread crumbs

4. Mix everything up

5. Put mixture into loaf pan

6. Cook at 400 degrees in oven for 20-30 min until brown

7. Serve

# 6 Lemon Cous Cous Stuffing

Ingredients: 1-3 cups of Cous Cous, 1 cup onion, 1 celery, 1 carrot, 1 cup of lemon juice, 1 cup water, pepper, salt

Preparation:

1. Bowl cous cous in water and lemon juice for 10-15 min

2. Chop up vegetables and add in with cous cous

3. Add pepper and salt

4. Serve

# 5 Super Sweet Potato smash

Ingredients: 3- 5 Sweet potatoes, 1 cup of brown sugar, 2-3 table spoons of honey, 4-5 marshmallows (optional), 3-4 cups of water

Prep:

1. Peel and Cut Sweet potatoes

2. Boil Sweet potatoes in water for 20-30 min until soft

3. Drain sweet potatoes, and put back in pot

4. Mash sweet potatoes

5. Leave under low heat

6. Add brown sugar, honey and marshmallows

7. Mix until everything is melted

8. Serve

# 4 Crunchy Cranberry salad

Ingredients: 1 bag ofDried Cranberries, 1 head of romaine lettuce, 1 bunch of spinach, 1 cup of walnuts, 1 cup of sun flower seeds, 1 cup of grapes, 1 yellow bell pepper, 1 red bell pepper, 2 tomatoes, 1 cup of balsamic vinegar, 1 orange

1. Chop lettuce, spinach, grapes, bell peppers, and tomatoes

2. Put all vegetables in salad mixing bowl

3. Add seeds and cranberries into mixing bowl

4. Get another bowl and put balsamic vinegar in

5. Peel orange and squeeze into bowl with balsamic vinegar

6. Put some orange pulp into balsamic vinegar

7. Serve salad and dressing

# 3 Sweet Fruit Stuffing

Ingredients: 2 apples, 1 bunch of grapes, 4 strawberries, 4 cups of bread crumbs, 1 celery, 1 carrot, 1 onion, pepper, salt, ½ cup of hot water, ½ cup of vegetable butter

Prep:

1. Chop apples, grapes, strawberries, celery, carrot, and onion

2. Put vegetables and fruit in pan with bread crumbs

3. Add hot water, and butter

4. Season with pepper and salt

5. Stir until stuffing is fluffy

6. Serve

# 2 Super Duper steamed vegetable mix

Ingredients: 1 head of cauliflower, 1 bunch of green beans, 1 bunch of broccoli, 4 carrots, 1 bunch of brussel sprouts and 1 bunch of pea pods, ½ cup lemon juice, salt, pepper, 7-9 cups of boiling water

Prep:

1. Cut cauliflower, carrots and broccoli

2. Put all vegetables in medium size pot

3. Get another larger pot and put water in it to boil

4. Put you pot with vegetables on top of bigger pot

5. Add lemon juice, salt, pepper

6. Cover your medium pot to steam

7. Steam for 20-30 minutes

8. Add butter (optional)

9. Put on plate and serve

# 1 Honey Roasted Mixed Nuts Salad

Ingredients: ½ cup of walnuts, ½ cup of peanuts, ½ cup of cashews, ½ cup of almonds, ½ cup of sunflower seeds, 2 bunches of spinach, ½ cup of strawberries, ½ cup of honey, and ½ cup of brown sugar, 1 cup of balsamic vinegar

Prep:

1. Put all nuts onto oven tray

2. Put honey and brown sugar in bowl and mix

3. Put mixture onto nuts

4. Put in oven for 5-10 minutes at 300 degrees

5. Rinse spinach and put in mixing bowl

6. Add sunflower seeds

7. Take nuts out of oven

8. Let cool

9. Put into mixing bowl with spinach

10. Mix all ingredients

11. Get small bowl and put balsamic vinegar in

12. Add strawberries and smash with balsamic vinegar

13. Serve salad and dressing
