8 Ways to Cook with Rice Milk

Devon Bruce
Rice milk is a delicious alternative for people who prefer not to drink cow's milk or are lactose intolerant. Store bought rice milk is usually fortified, so it is just as (if not more) nutritious than cow's milk. I personally do not drink regular milk so I use rice milk quite often. Here are some ways that I cook with rice milk:

1. Smoothies
I like using rice milk in my smoothies because it has a creamy texture. My favorite smoothie is rice milk, banana, and coconut.

2. Oatmeal
Rice milk adds flavor to oatmeal compared to water or cow's milk. Also, you don't have to add as much sugar or honey to your oatmeal because rice milk is already sweetened.

3. Mashed Potatoes
The mashed potatoes do not come out as thick when you use rice milk. Also, it is better than using soy milk because it is not as sweet.

4. Pancakes
Just like with mashed potatoes, it gives pancakes a fluffy texture without being too thick.

5. Ice Cream
When making ice cream, simply replace regular milk with cows milk in your recipe

6. Corn
Add rice milk to your water while boiling corn on the cob. Even though it sounds unconventional, it is very tasty! It makes the corn a bit sweeter.

7. Hot Chocolate
Just use rice milk instead of cow's milk in your recipe.

8. Sleepytime Tea
Using rice milk instead of water when making sleepytime tea is very delicious. The rice milk compliments the flavor of the tea.

Tips:
Make sure you watch rice milk while it is being heated. It is just like cows milk so has a tendency to boil over and stick to the bottom of the pot.

Rice milk is not as creamy or thick as regular milk. If you don't want to have your recipes "watered down", just add less rice milk.

Thank you for these great recipes. I have been drinking soy milk because of my lactose intolerance. I buy the chocolate, and it's delicious. I have been thinking about trying rice milk, and it sounds good for cooking and in most recipes that ask for milk. Good article. Thanks again, Janet
