Approx. 2 pounds Boneless Skinless Chicken Breasts 4-6
1 package Pepperidge Farm Country Style Herb Stuffing Mix
1 Can Campbells Cream of Chicken Soup
1 Cup Buttermilk Ranch Dressing
1/2 Cup Water
4 Tablespoons Butter or Margarine

Cook Chicken Breasts
Boil chicken breasts in a stock pot with just enough water to cover the chicken until they are fork tender.Seasonings such as salt, pepper, garlic or onion powder can be added to taste. However keep in mind that the stuffing mix is salty and you don't want to go overboard.2
Prepare Stuffing
In a large bowl mix the stuffing mix with water, soup and dressing and set it aside.3
Add Chicken to Mixture
Shred or cut cooked chicken breasts into cubes and fold into the stuffing mixture. If the mixture seems dry or crumbly add leftover chicken stock or additional ranch dressing to the mixture until it is a soft and creamy mixture. Add in the butter mixing well.4
Bake Casserole
Fill a 9x13 in. casserole dish with the chicken mixture and place into a 350 degree preheated oven for approximately 35 minutes. Ovens vary and you should remove the casserole when the top is firm and glazed slightly.5
Serve
Serve hot with rice or noodles for a great filling meal on a cold evening. Your family will be asking for chicken casserole every time the weather cools.Tip
