You've just made a delicious fresh salad, why would you want to put a bottled dressing with a bunch of preservatives in it on your beautiful salad. Try this fresh ingredient delicious dressing in just five minutes.

Ingredients

Serves 4
2 tablespoons Red Wine Vinegar
zest ½ orange
juice ½ orange
one minced garlic clove
1 Tablespoon Dijon mustard
1 tsp sugar or sweetner
1 tablespoon Finely chopped fresh parsley
to taste Salt and pepper
1/3 cup extra virgin olive oil

Just mix all the ingredients together in a bowl and then stream in the oil whisking until it is well mixed. The mustard causes it to nicely emulsify and it clings to the lettuce leafs. You can use more or less sweetner for taste. We make a big bowl of salad and then dress the whole bowl with this dressing and toss it evenly. Then serve individual servings. It is a family favorite
Tip
If you are not a huge fan of garlic you could just mash the garlic and put some juice in for flavor instead of mince.
