4 litres of pure water
300 grams of white sugar
1 Kombucha tea fungus
400 ml of Kombucha tea from your last brew - referred to as mother tea.

Bring the water to a boil and than add sugar. Turn off the heat and begin to stir the sugar until it is fully dissolved. Add teabags and allow them to soak for 15 minutes. Remove the bags and allow to cool. Strain (if using tea leaves) and pour into a fermenting jar. Add the fungus and mother tea to the jar. Cover and allow to sit for one week in a place free from contaminants such as molds, cooking fats, etc.

When making homebrewed Kombucha tea always remember there could be a bad batch. Watch for mold growing on the culture, mushroom, or fungus. You should also watch for Kombucha fungus rising to the surface of the brew.

Kombucha tea will taste awful, it really is not as good as the ready bought kind but it will save you lots of money and have the same health benefits of the ready bought brand.
