If you are a newbie, do not be anxious to get started. Now is the right time to shoot for that target and aim for a better health and a better you. Learn what foods are best for you and avoid those that can trigger the worst in you. Attempt to lessen on the guilt foods like chips, sweets, donuts, and the like. Maybe you can still dig on them once in a while but remember not too much. Vegetables and fruits are still considered the best alternatives for snacks.It may be a struggle in the beginning but once you are into it, you will definitely feel great about yourself.
So for all the vegetable lovers out there and even for starters, here is one vegetable recipe you can try. It is simple and easy to cook anytime you want.
Green Mung Bean and Baby Spinach Recipe
Ingredients:
-green mung bean, 1 cup
-baby spinach, 1 pack or 1 bundle
-1 tablespoon onion, chopped
-1/2 tablespoon garlic, chopped
-1/2 tablespoon ginger, chopped
-1 tomato, chopped
-1 teaspoon of cooking oil
-2 cups of water
-salt and pepper to taste
-1/2 cup shrimps or chicken breast, cut in strips (optional)
Preparation:
1. Boil 2 cups of water on high heat. Put the green mung beans on boiling water and decrease the heat to medium. Wait till the skins split from the beans then remove from the pot and throw. Make sure there is enough water on the pot to cover the beans. If the beans are soft enough remove from heat.
2. Heat a clean pot and put the cooking oil. Add the onion, ginger,garlic, and tomato then saute for a few minutes.
3. Add the shrimps or chicken breast strips, whichever you prefer. Continue stirring until the meat is cooked and tender. If you're not adding any meat proceed to step 4.
4. Once the meat are tender, put back the green mung beans and stir.
5. Add some water and wait till it boils. Add salt and pepper to taste.
6. Turn off the heat and add the baby spinach leaves. Stir and serve it hot with rice. A smoked fish or any fried meat you like can also be a complement to this dish.
Green mung beans are usually available at the Asian section of your any local supermarkets. There are many other ways in which you can prepare this vegetable. The green mung beans can also add sparks to some desserts. It can be used on breads as a sweetened filling. These beans are also delectable as toppings on ice popsicles. Green mung beans are one of the ingredients for "halo-halo" too, which is a sweet Filipino dessert. Just in case you want to try a simple sweetened green mung bean dessert now, here is a simple recipe you can try at home. First, Prepare a pot of boiling water and put in the green mung beans. Again wait till the skins are separated from the beans. Remove and disregard the skins. Make sure that the green mung beans are fully cooked and are soft enough for you to eat. Drain the water from the beans and set aside. Get a bowl, spoon, sweetened condensed milk or if you don't have it, you can simply use milk and sugar . Then put some green mung beans in a bowl, add some sweetened condensed milk and stir. You can eat this dessert either hot or cold whichever you prefer. That's it! Simple yet satisfyingly yummy.
It is nice to keep in mind too the health benefits of green mung beans and baby spinach leaves. So how healthy are these vegetables? For the green mung beans, it is generally a rich source of fiber. That is why beans have the ability to lower the cholesterol in your body. Green mung beans are also excellent sources of protein, carbohydrates, folic acid, antioxidants and vitamin B6. The baby spinach leaves on the other hand are extremely rich in antioxidants. That is why it is highly recommended to add the spinach last on any of the dishes you cook. This way the nutrients of the spinach is still intact. The baby spinach leaves are very rich in nutrients but are mostly known as high sources of iron and calcium.
So for all the health enthusiasts out there, this recipe is a sure fire hit addition to your collection. It is a certified nutritious dish, that can be cooked very easily. Just remember that you can pair this dish with rice and smoked fish or any fried meat of your choice. Chow to your heart's content!
