Roast Chicken
1 pound chicken
1 teaspoon each
Salt, pepper, and garlic powder and cinnamon
¼ cup water or chicken stock
3 tablespoons butter, melted
Step One: Rinse chicken with cold water, dry, and season with salt, pepper, garlic powder, and cinnamon. Preheat oven to 350
Step Two: Place chicken in roasting pan with water or stock. Cover and cook at 350 degrees for 30-40 minutes.
Step Three: After 30-40 minutes, remove chicken from oven, uncover, and drain liquid and pour melted butter over chicken. Cook uncovered another 30-40 minutes until done.
Roasted potatoes
These can be made ahead of time and micro waved before serving, just "nuke" on high 2-4 minutes and serve
1 pound baby red potatoes
1 teaspoon sea salt
1 teaspoon black pepper
1 teaspoon oregano
1 tablespoon oil
Step One: Wash potatoes and cut into quarters.
Step Two: Toss potatoes with oil. Place them cut side up on a baking sheet. Season with Salt, Pepper and Oregano. Place in preheated oven at 400 degrees for one hour. Serve after allowing to cool 5 minutes or place them in a good container for reheating.
Steamed Sweetened Green Beans
1 pound fresh green beans, trimmed and cleaned
½ cup water
1 teaspoon honey
Step One: Place beans in pot of simmering water for 3-5 minutes. Drain the beans and toss with honey. Serve.
*Important note: Honey is not a pasteurized food. Due to this it is best to not serve honey to anyone with immunity problems or children under a year old.
