A Recipe for Blueberry Popovers

March 10 is National Blueberry Popover Day So in honor of that; I thought I'd post a great recipe that will make your mouth water.

This recipe is great for Diabetics or people who are not diabetic: It makes six popovers but be careful and don't eat but one as it is high in calories.

PreHeat over to 350

1 cup nonfat powdered milk
1/2 tsp vanilla extract
2 TBS melted butter
1/8 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp salt
1 cup flour
1/2 cup egg substitute
2 cups blueberries
for topping
1 TBS sugar and 1/4 tsp cinnamon

Mix the extract and spices with the butter, salt and milk in a big bowl. Stir in the flour only until it is combined, don't over stir.

Now using a spatula add and fold in the blueberries gently into the batter.
Pour batter into six muffin tins lined with paper cups (or greased and floured). Sprinkle topping over each of the muffins. Bake until they turn golden brown and are firm to the touch.(about 15 to 20 minutes)

This contains per helping: 183 calories, 33 gr carbs, 6 gr protein, 3 gr fat, 7mg cholesterol and 2 gr sodium

    Blueberry Popovers!? Wow! I just love even regular popovers, so hot they almost burn with a 1/2 stick of salted sweet cream butter apiece! Can you tell I weight 260?
