Recently as I was once again browsing the Internet in search of any new products, I discovered Bob's Red Mill Low-Carb Baking Mix. After reading all the ingredients, I decided to give the product a try. It was rather high priced, costing more than $5 for a one pound bag. After some further searching, I found the same product on Netrition for a little over $3 for the same identical product, so I placed an order.
Bob's Red Mill Low-Carb Baking Mix has 11 grams of carbohydrates per 1/4 cup. It also has 5 grams of dietary fiber which means this baking mix has only 6 net grams of carbohydrates per 1/4 serving. (By subtracting the total grams of fiber from the total grams of carbohydrates, you have the total net grams of carbs). The net grams of carbs are the ones that will impact blood sugar levels in a diabetic and the fewer net grams of carbs, the better.
One thing I especially like about the Bob's Red Mill website is that it also provides a variety of recipes using their products. I found several great recipes using the Low-Carb Baking Mix and found them to be very good. I made apple pecan bread using their basic quick bread recipe and it was very tasty. One word of caution, however, this bread will not keep very long because it has no preservatives. A good way to preserve it is to keep a portion of the bread tightly wrapped in the freezer so it will not spoil before you can eat it all.
I have also made pancakes with this baking mix and found that it provides a very hearty tasting pancake, much like buckwheat. I usually add some chopped pecans to my mix and serve with blueberry syrup. This makes a delicious breakfast! (Diabetics should use sugar-free syrups).
Bob's Red Mill Low-Carb Baking Mix is a blend of all-natural ingredients, including high fiber oat bran, wheat bran, soy flour and whole grain flaxseed meal, so you can be sure that the few carbs you do eat are nutritious. It is easy to use for making delicious pancakes, muffins, quick breads and more because it measures cup for cup as any other baking mix.

Thanks for the info. I'm always looking for low carb stuff for my mom and dad. They don't like to admit it, but any reduction in carbs helps with their diabetes. It has taken a sledgehammer for me to get it across their thick skulls, that with diabetes you not only have to watch candy & sweets but it is the CARBS!!! I'm going to get this for them.

I use Red Mill flours all the time...soy, millet, buckwheat, etc. Good stuff, reasonably priced.
