What is Spelt Flour?
Spelt is an ancient grain, in the wheat family but it is actually a cereal grain. Spelt looks very similar to wheat, but it has a slightly nutty flavor,contains some gluten, but the gluten in Spelt breaks down very easily. Spelt is a good choice for people with wheat allergies as well as a good choice for diabetics. The carbohydrates found in Spelt do not quickly impact blood sugar, making it a low glycemic index food choice.

Can I Substitute Spelt Flour for My Regular Baking Flour?
Yes, you can! Spelt Flour can be used in equal measure in any recipe.

I've used Spelt Flour in cakes, muffins, cookies, pancakes, waffles and even for making gravy. It always produces a great product. I especially like it for making gravy because it thickens nicely and adds a delicate brown color to the gravy. Waffles and pancakes bake up beautifully and taste great. Diabetics can enjoy pancakes and waffles made with Spelt Flour simply by pouring their favorite brand of sugar-free syrup on top.

I began using Spelt Flour several years ago because my husband is diabetic. I found that he can indulge in occasional baked goods without having a sugar spike when I bake with Spelt Flour. The flavor and consistency of the baked goods is as good or better than using conventional flour.

One of the best things about using Spelt Flour is that you can use your favorite recipes without making alterations in the recipes. You would use the same measurement of Spelt flour as you would any other type or brand of flour. Simply by using your favorite diabetic friendly sweetener (I prefer Stevia) you can easily bake up some delicious treats for the diabetic in your family. These baked goods can be enjoyed by the whole family, as well, because they are so tasty and nutritional.

In addition to using Spelt Flour in baked good, I also use this flour to bread chicken and other meats for frying. It always produces a nice crust with a very good flavor.
