As an alternative to toast and tea, I woke up one Saturday morning and reached into my cupboard for a box of Carrot Cake Muffin Mix made by Anastasia Bakery. My husband had purchased the 12-ounce box for $3 at Big Lots. While the cost may raise some eyebrows, my husband likes to peruse the aisles of stores for interesting bakery products that are not usually seen among the usual brand names found on grocery shelves. So, I have learned not to fuss too much when he sheepishly brings home a box of some bakery product mix that he wants me to try. In reading the instructions for making the Carrot Cake Muffin Mix, I noticed that the preparation was very easy and required three ingredients. All that was needed to add to the mix were water, eggs, and vegetable oil (I used canola oil). The oven was preheated to 350 degrees as the instructions stated and the three ingredients were added to the packaged carrot cake muffin mix in a large bowl. After mixing the ingredients, you can lightly spray your muffin tin or use paper muffin liners to be filled with the batter. In 15 minutes, the Carrot Cake Muffins were baked to the desired doneness. After a few minutes of cooling on my cooling rack, I enjoyed the Carrot Cake Muffins with a cup of lemon tea for a light breakfast. This treat was a welcome change from my usual hot cereal breakfast fare accompanied by toast.
I found the Carrot Cake Muffins to be satisfactory, and as I ate them I immediately thought of other ingredients that could be added such as raisins, chopped almonds or walnuts, or coconut or any combination thereof. For those who really want to dress up the Carrot Cake Muffins, you can use your favorite cream cheese topping for another taste variation.
The package contents yielded 15 muffins and the package label states that total calories are 90 with no calories from fat. Cholesterol was listed as 0 mg with total carboydrate content listed at 24g. Vitamin A was listed at 35 percent, calcium 2 percent, vitamin C 2 percent and iron listed at 4 percent. A statement on the side panel states that the product contains wheat and has been manufactured on shared equipment and may contain traces of dairy, eggs, soy and tree nuts.
The package is yellow and brown with a picture of muffins on the front along with a sheaf of wheat within the symbol containing the name "Anastasis Bakery".
