The Delicious and Versatile Mushroom

Mushrooms are one of the most versatile foods Earth provides us with. You can grill, sauté, broil, boil, or eat them raw. They can be a side dish, appetizer, ingredient in a dish, or entrée. A meaty vegetable that can satisfy the burliest man, the pickiest toddler, or the most dedicated health nut, the mushroom is filling and healthy at the same time. With such a healthy food at our fingertips that can be positively delicious, why are we barely eating this fabulous vegetable?

One medium white mushroom is 4 calories; one large portabella mushroom is 26 calories. WOW, that is awesome! Mushrooms are a great source of potassium, which is a vital nutrient for humans. Why have we not yet called these the super food of the century? I know there are many other foods out there that are just as awesome, but the versatility of the mushroom is amazing.

Unfortunately, people usually cover these vegetables in dressing, stuff them with oily filling, or cover them in butter to make them less healthy. Raw mushrooms, after a while, can tend to bore people. So there are 2 recipes where the mushroom is the center of the dish, and these are healthy and delicious recipes.

On the nights that I have to have a snack that is filling and is not celery and carrots, I reach for the mushrooms and create a savory, melt in your mouth dish that satisfies my craving. With less than 30 minutes in the kitchen, these dishes are easy to throw together and enjoy on the couch in front of your favorite movie.

The first recipe is savory sautéed mushrooms and is a healthy and satisfying dish.

Ingredients:

16 Ounces mushrooms, cleaned and quartered.

2 Tablespoons butter.

1 clove of garlic, minced.

Salt, pepper, and other desired spices, to taste.

1/3 cup low sodium chicken broth.

Melt butter over medium heat; add mushrooms, garlic, and spices. Turn heat to medium/low and sauté for 6-8 minutes. Add chicken broth and allow to cook about 5 minutes, or there is very little liquid left in the pan.

The second recipe is a basic marinated mushroom recipe.

Ingredients:

16 Ounces fresh mushrooms, cleaned and bottoms trimmed.

¾ cup extra virgin olive oil.

¼ Cup white wine vinegar.

1 Teaspoon Basil.

1 Teaspoon Garlic powder.

1 Teaspoon Dill.

Combine in a medium bowl olive oil, vinegar, basil, garlic powder, and dill, and stir until smooth. Add mushrooms and stir well. Refrigerate for several hours, preferably overnight stirring several times. Serve cold.

These 2 recipes are easy to prepare and are delicious. They can be eaten as a side dish, snack, or part of a complete meal. Enjoy!
