A Yummy Treat After All Those Hot Peppers!

If you are a fan of Mexican foods, you know that the peppers can be very spicy or even super hot. This Mexican Dessert will definitely cool down your mouth. This is a dessert that we serve at our family's Mexican Restaurant , called El Tipico, in Toledo, Ohio. This dessert is a winner!

Sweet Chimi

Ingredients:

10 inch flour tortilla
Whole or halved strawberries in syrup
Cinnamon
Sugar
Whipped Cream
Vanilla Ice Cream
Sprinkles
Maraschino Cherry
Vegetable Oil (for frying)

First of all you will need to buy 10 inch flour tortillas. You will need one for each Sweet Chimi. Make sure that the tortilla is workable, by that I mean either held at room temperature or slightly warmed in the microwave oven. Don't microwave it for too long or it will become hard.

Next you take the strawberries and strain off the syrup. You can also use fresh strawberries but the ones already in sugar add a better flavor in my opinion. Put the strawberries (you decide how big you want the chimi) down the center of the 10 inch flour tortilla. Tuck one side of the tortilla under and roll (to form a burrito like result) and secure the edge with toothpicks. Roll up the ends of the tortilla and secure with toothpicks.

Heat the vegetable oil on the stove. When it is ready, gently drop the chimi into the oil. Be careful not to get the oil too hot or drop the chimi in the oil too fast. After it starts to brown on one side, flip it over and brown the other side. Take it out and drain off the excess oil.

Place the chimi on a plate. Take out all the toothpicks. Next you sprinkle the chimi with cinnamon and sugar mixture. Try to do this as soon as you can so that it will stick to the surface. Take your whipped cream and put a swirly line down the length of the chimi. Shake some sprinkles on top of the whipped cream and add a cherry on top. Place one scoop of vanilla ice cream on each side of the plate.

All that is left is to enjoy! This will serve at least two people. If you want to make individual Mexican Desserts, you can use a smaller 7 inch flour tortilla. We always use strawberries, but you could subsitute any type of fruit filling you like.
