In times of uncertainty and economic woes, people tend to hark back to a time of simplicity and ease of mind. Nothing speaks of simplicity and ease of mind as a low-calorie old-fashioned homemade dessert. Not only is this dessert easy to make, but also, gentle to your wallet.

As usual with me, I stumbled upon this recipe by accident. I had some lime-flavored Jell-O cups and some strawberry yogurt in my refrigerator. The Jell-O seemed too bland and the yogurt too boring. Why not combine bland and boring to see what happens? I'm all for scientific experiments. Actually, this one turned out pretty good.

Recipe: Ingredients

Lime-flavored Jell-O Cups or instant Jell-O

Strawberry yogurt

Fresh Strawberries

Fresh Lime

Equipment:

Since we are doing this the old-fashioned way, there are no measurements. What you don't need are measuring cups, measuring spoons, blender, large bowl, grater and mixer. What you do need are, spoons, parfait glasses or dessert bowls and a paring knife.

With the spoon, scoop out half of the yogurt into the parfait glass, then add a layer of Jell-O (if you like, you can diced the Jell-O into small cubes before layering), then add the rest of the yogurt on top of the Jell-O. Add more Jell-O and top it off with slices of fresh strawberries and a wedge of lime. Serve immediately and enjoy. And the best, part no explosions.
