A Tasty Vegetarian Dish Even Meat Lovers Will Enjoy This Fourth of July

As a Vegetarian, it's always hard when trying to plan around holidays in general, but things become even harder around holidays that involve picnics and barbecues such as the Fourth of July. Here's a great dish you can make to share with your vegetarian friends that even the meat eaters will enjoy.

Vegetable Pizza

Ingredients:
2 Cans of crescent rolls
2 Bricks of cream cheese (If you're watching your fat content, feel free to use low-fat or fat free cream cheese)
1 Packet of ranch dressing powder
3 Cups total fresh raw vegetables (diced) - Pepper, Cucumber, Tomato, Broccoli, Spring Onion, Zucchini, Carrot, Radish...any vegetable you enjoy raw
1/2 Cup shredded cheddar cheese
1/2 Cup shredded mozzarella cheese
Cooking Spray

Directions:
1) Soften cream cheese for about two hours prior to making.
2) Open crescent roll tubes and roll the crescents out FLAT on a cookie sheet sprayed with cooking spray (to make a crust).
3) Bake flat crescents according to directions on the tube.
4) Combine cream cheese with ranch dressing mix.
5) Let crescent crust cool completely before spreading cream cheese mix.
6) Sprinkle vegetables on top of cream cheese mix.
7) Top with both shredded cheeses.

To make personal pizzas, use a tube of flaky biscuits instead. Separate the biscuits into halves and flatten before baking to make crusts, top with cream cheese mixture, and allow your guests to top pizza with toppings of their choice.

This also can be made substituting non-dairy (soy) cream cheese, 2 tbs dill or Italian dressing mix, and soy shredded cheese for vegan friends.
