A Tasty Way of Cooking Brussels Sprouts

Grace Covelli
Brussels sprouts are a cabbage look alike, but much smaller. They contain a high amount of vitamin C, and they are a good source of fiber. Although Brussels sprouts make an excellent addition to a healthy diet, many find these tiny cabbages need help when it comes to flavor. Cooking Brussels sprouts and then marinating them in a salad dressing makes them much more interesting to the taste buds.

Before making Brussels sprouts with salad dressing, you will need the following ingredients:

1 tablespoon of extra virgin olive oil

½ teaspoon of jarred, minced garlic

½ teaspoon of Dijon mustard

3 tablespoons of balsamic vinegar

¼ teaspoon of dried oregano

Begin by placing 12 Brussels sprouts in a steamer, or pot filled with about an inch of water. Steam the Brussels sprouts for approximately 5 to 12 minutes, inserting a fork into them while they are cooking to confirm they are done. When the fork slips into the Brussels sprouts easily, you will know they are ready. When done, drain the sprouts in a colander and set aside.

Make the salad dressing for the Brussels sprouts by mixing together the olive oil, the jarred, minced garlic, the Dijon mustard, the balsamic vinegar and the dried oregano. Place the drained Brussels sprouts in a plastic container with a tight fitting lid, and then pour the dressing over the sprouts and cover the container. Shake the container to thoroughly coat the Brussels sprouts with the dressing, and then put the container in the refrigerator to chill for several hours so the Brussels sprouts can absorb the flavor of the dressing. Serve the marinated Brussels sprouts as a side salad with meat, fish, or some other entrée.

Note: Through experience, I have found Brussels sprouts marinated in salad dressing taste best the following day.
