J.A. McLynne
Next to chicken wings, nachos are a food staple at any Super Bowl Party. Ordinary Super Bowl party nachos can be turned into something extraordinary by topping with this home made green chili recipe at your next Super Bowl party. You can also create green chili burros with this green chili recipe.

Making green chili is an easy process. There is little chopping involved, other than preparing the meat. It can also be prepared a day or two in advance, alleviating some the stress brought on by Super Bowl party food preparations. If you make the green chili the day before, all you have to do is place the pot back on the stove and re-heat.

The total preparation time is about 3 to 4 hours. This may sound like a long prep time. But, you do not have to baby sit the stove while the green chili is cooking. Simply let it simmer away!

Super Bowl Party Green Chili Recipe

Ingredients list for green chili:
A pork roast, that is about 3 to 5 pounds.
About 2 cups of water
About 2 cups of beer
About 2 cups of chicken broth.
1/2 cup chopped cilantro, more or less to taste.
8 4 oz. cans of green chill peppers

Suggested spices for green chili:
Bay leaf
Mexican oregano (substitute Italian oregano if needed)
Chili Powder
Cumin
Basil
Paprika
Salt and Pepper
Red Pepper

1. Cut 3 pounds of pork roast, cubed in 1 to 2 inch pieces. Place in a large pot.

2. Add equal parts of water, chicken broth, and beer until the meat is covered.

3. Add the spices. The amount of each spice that you add is up to you. My preference is to a dash of each in equal parts at the start. Then I adjust to taste as the chili cooks. Then you will end up putting too much spice in the chili.

4. Bring to a boil for just a minute.

5. Cover the pot and let the green chili simmer for about 3 hours on a very low heat setting. You may need to add broth, water, or some beer as the meat simmers.

6. After 3 hours of simmering remove the pork cubes from the liquid. Place the meat in a large plastic bowl and shred the meat. The meat should be tender enough to easily pull apart with a pair of forks.

7. With the meat set aside, turn the heat to high on the stove, and being the liquid to a boil. Allow some of the liquid to boil off. Boiling off about a third to half of the liquid should be sufficient.

8. If you want a thick green chili sauce, you can add one tablespoon corn starch to a quarter cup of cold water, an mix well. Then add the corn starch mixture to the green chili liquid and stir. This should help it thicken.

9. Add the meat, simmer, and then add 8 cans of green chili peppers. Let simmer for a few minutes. If you want the chili to be spicy, you can add some chopped jalapeno peppers.

You can serve this green chili on warm tortillas, or as a part of your Super Bowl nacho creation. It will be the hit of the party!
