2 c flour
1 c canned pumpkin puree
3 Tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 1/2 c milk
1 egg
2 Tbsp veg oil
2 Tbsp vinegar
In a large bowl, combine milk, pumpkin, egg, vinegar and oil. In a medium bowl, combine flour, brown sugar, baking soda, cinnamon, and salt. Pour these ingredients into the large bowl and mix just until combined. Heat a lightly oiled griddle or non-stick frying pan over medium-high heat. Pour batter 1/4 cup batter onto cooking surface for each pancake. When pancake is covered in tiny bubbles, flip and cook the other side.
PUMPKIN OATMEAL
1 c quick-cook oats
3/4 c milk
1/2 c canned pumpkin puree
1/4 tsp pumpkin pie spice
1 tsp sugar
1/4 tsp cinnamon
Combine oats and milk in a microwave-safe bowl. Cook on high for 1 1/2 minutes, stirring once. Stir in other ingredients, heat through, and serve hot!
PUMPKIN FUDGE
2 Tbsp salted butter
2 1/2 c sugar
2/3 c evaporated milk
1 c white chocolate chips
3/4 c canned pumpkin
7 oz marshmallow creme
2 tsp vanilla
1 tsp cinnamon
Begin by lining a 9x9 baking dish with aluminum foil. In a large saucepan, combine the milk and sugar over medium heat. Bring the ingredients to a boil, stirring occasionally. Add the pumpkin and cinnamon and bring them to a boil. Add the marshmallow creme and butter and bring them to a rolling boil. Cook, stirring often, for 18 minutes. Remove pan from heat, and add chocolate chips and vanilla. Stir until everything is combined and all of the chips are melted. Pour the mixture into your lined pan. Cool and cut into squares or use cookie cutters in fun Autumn shapes!
FRIED PUMPKIN
1 small sugar pumpkin
1/2 c flour
1/4 c butter
4 Tbsp cinnamon sugar OR salt and pepper
Slice the pumpkin in half. Remove the seeds, skin, and pith. Cut pumpkin into 2-inch cubes. Place half of the pumpkin in a large bowl and season with cinnamon sugar OR salt and pepper, depending on the taste you prefer. Add flour and stir gently, to coat. Melt butter in a deep skillet. Add pumpkin and cook, turning often until golden brown and tender.
