A Very Simple Goulash

This recipe came to me on one of those nights where I had some of this, some of that, and decided to put it all together. I was looking for something simple with the stuff that I had on hand and something my 5 kids would love, or at least sit down to eat. This was a huge hit and my title of "Super Mom" was reinforced. This is an easy weekday recipe.

Ingredients

1 lb. ground beef

1 lb. elbow macaroni, cooked and drained

1 small can of tomato sauce

1 medium can of diced tomatoes

1 medium onion, diced

1 clove of garlic, crushed

Salt & pepper, to taste

Brown together the ground beef, onions, and garlic. Salt & pepper to taste. Add 1 small can of tomato sauce. Simmer for 5-8 minutes. Let sit. In a separate pot, cook macaroni according to directions. Drain. Add meat mixture to the macaroni. Add diced tomatoes and corn. Mix well. Serve warm. Optional: Garnish with shredded cheddar cheese.
