I have been eagerly awaiting the opening of Abiquiu Cafe, located at 1034 West Belmont Avenue in Chicago's Lakeview neighborhood, as it will soon be opening around January 7th or 8th.

The restaurant, pronounced ABBA-Q, will feature chile rellanos, enchiladas, and tamales, according to their website. I am also looking forward to the free sopaipillas, that will be served with dipping sauce, and the homemade tortilla chips and red sauce that they are offering to their customers by placing them on each table.

If you check out their website, you will learn that the name Abiquiu originates from a New Mexico town, and also, every one of their entrees will be smothered in sauce, unless you otherwise request the sauce to be "on the side."

The restaurant will also feature desserts such as Bisochitos, which incidentally, is the official State Cookie of New Mexico.
