5-Minute Italian Green Salad
1 ½ cup Italian mix Giardiniera
1 (10 ounce) bag of ready-to-eat romaine lettuce
3 tablespoons classic Italian dressing
Drain and rinse the Italian mix Giardiniera. Gardiniera is a blend of cauliflower, carrots, celery, peppers, and pickles in vinegar. Rinsing the Gardiniera will reduce the salt content of the finished salad. And always remember to wash you bagged lettuce. It might say "Ready-to-Eat" but wash it anyways! You can never be sure where it has been, or if something dripped on it after leaving the factory. Toss the Gardiniera with the Romaine and drizzle with Italian dressing. Simple, healthy, best of all - FAST!
Boston Bibb Salad
4 cups bite sized pieces of Boston Bibb lettuce
1 (11 ounce) can mandarin oranges in the juice, drained
¼ cup unsalted sunflower seed kernels - toasted
2 tablespoons balsamic vinaigrette
This salad is VERY easy. Simply toss the lettuce, mandarin oranges, and sunflower seed kernels and then drizzle with balsamic vinaigrette! Delicious!
There are other ways to add green to your diet without having salads with every meal. You can add sprouts to your club sandwich at lunchtime. You can order spinach on your pizza or in your alfredo pasta. You can cook collards, or make creamed spinach- the possibilities are endless!
Creamed Spinach
2 (10 ounce) bags chopped spinach, thawed
½ cup chopped onion
2 - 3 cloves garlic, minced
2 tablespoons butter
1 cup whipping cream
½ teaspoon pepper
¼ teaspoon salt
Dash of nutmeg
Drain the spinach well, and pat it dry. In a large skillet cook the onions and garlic in butter for 5 minutes. Add in remaining ingredients and bring it to a boil. Continue cooking until the cream starts to thicken. Add the dried spinach. Simmer uncovered for 2 minutes or until the cream is thick.
