Adult Style Grilled Cheese Sandwiches

Grilled cheese sandwiches are great for lunch, snacks or even a light dinner. These sandwiches are not for children only. With just a few additions or changes, you can make a grilled cheese sandwich that almost any adult will enjoy. For an appetizer or hors d'oeuvre, simply remove crust, cut in quarters and serve.

Typically I use an electric sandwich grill to make cheese sandwiches. If you do not have a grill, a cast iron skillet or frying pan will suffice. Before assembling your sandwich for grilling, be sure to butter the outsides of each slice of bread for good flavor. It is also important that you pre-heat your pan. It should be hot, but not too hot and definitely not smoking. Remember, if the skillet is too hot, you will possibly burn the bread, or the bread will brown too quickly not allotting time for the cheese to melt.

Grilled Cheese & Tomato Sandwich

One of my favorites is a cheese sandwich grilled with a slice or two of red tomato. To create -

You'll Need:

4 slices of 2 types of cheese (consider a combination of cheddar, Monterey Jack or mozzarella cheeses)
4-8 thin slices of red tomatoes
4 slices of Italian or sourdough bread
1 tbsp of butter

Preparation:

1. Pre-heat skillet or grill.
2. Spread butter on outside slices of bread.
3. Place cheese and tomatoes between inside slices of bread.
4. Transfer to skillet and cook until golden brown.

Serve with tomato soup for a tasty lunch. You can also make a double decker sandwich for a more hearty meal. This recipe makes two sandwiches.

Grilled Cheese & Spinach Sandwich

Another twist on the yummy grilled cheese sandwich incorporates spinach in the mix. This addition makes for a more healthy and sophisticated sandwich. Nevertheless, it is extremely easy to make.

You'll Need:

4 slices of mozzarella cheese
2 cups of fresh spinach
4 slices of Italian or sourdough bread
1 tbsp of butter

Preparation:

1. Pre-heat skillet or grill.
2. Spread butter on outside slices of bread.
3. Place cheese and a handful of spinach (spread evenly) between inside slices of bread.
4. Transfer to skillet and cook until golden brown.

Serve with a Tuscan soup for a really delicious meal. This recipe makes two sandwiches.

Greek Style Grilled Cheese Sandwich

Besides Italian, Greek food is my favorite cuisine. For a less traditional grilled cheese recipe, consider using pita bread.

You'll Need:

2 medium-sized pita breads
2 tbsp of pesto butter
1 cup of crumbled feta cheese
4 thin slices of red tomatoes

Preparation:

1. Pre-heat skillet or grill.
2. Cut pitas in half.
3. Spread pesto butter on outside slices of pita bread.
4. Sprinkle crumbled feta evenly across inside of bread.
5. Top with one or two slices of tomato.
6. Transfer to skillet and cook until golden brown.
