Ingredients

Serves 6
4 lb chicken - cut up into pieces
1 green bell pepper (large) - sliced
1 red bell pepper (large) - sliced
2 yellow onion (large) - sliced
3 cups tomatoes - diced
8 garlic cloves - sliced
2 lbs spinach leaves - fresh or frozen (defrosted)
3 tbsp oregano - dried
3 tbsp tarragon - dried
3 tbsp basil - dried
1 cup black olives - pitted
1 cup green olives - pitted
1 tbsp black pepper
1 tbsp salt
1/4 cup balsamic vinegar
1/4 cup olive oil

Directions for Aegean Chicken

Brown Chicken
Brown Chicken in large skillet or frying pan in 4 tablespoons of olive oil over medium heat. Remove chicken and set aside.

Saute Peppers, Onion and Garlic
Add remaining olive oil to pan. Gently saute peppers, onions and garlic. Garlic should be light golden brown. Peppers and onions should be tender.

Add Dry Seasonings and Balsamic Vinegar
Add oregano, tarragon, basil, salt, pepper balsamic vinegar and mix well.

Return Chicken to Pan and Simmer For 30 Minutes
Return chicken to pan and mix with vegetables and seasonings. Cover, lower heat and simmer for 30 minutes.

Add Tomato, Spinach and Feta Cheese - Simmer for 15 minutes
After 30 minutes, add diced tomatoes, spinach leaves and feta cheese cubes. Mix, cover and simmer for 15 more minutes,

Serve
Serve chicken with rice. Carrots, zucchini and okra go well as an additional vegetable.
