After-Prom Breakfast Party

Breakfast food is good any time of day... especially after a night of dancing. Invite your kid's friends over for yummy food after the prom is over:

Cinnamon Muffins

Ingredients:
3 eggs
1 cup oil (or ½ cup oil and ½ cup applesauce)
½ cup milk
1 tsp. vanilla
1 cup sugar
2 cups flour (may use white or whole wheat)
½ tsp salt
1 ½ tsp baking powder
½ tsp baking soda
2 tsp. cinnamon

Directions:

Preheat oven to 325 degrees. Mix all of the above together in a large bowl. Grease 12 muffin tins, or use paper liners. Pour batter into tins (fill each about ¾ full). Mix ¼ cup sugar and 1 tsp. cinnamon together in a small bowl. Sprinkle the tops of the muffins with this mixture before putting in the oven.

Bake 30 minutes. These are delicious with just a little butter. You may also add chocolate chips or raisins (1/2 cup) if your crew wants.

Egg Quesadillas

Ingredients:
Flour tortillas
2 eggs per person
shredded cheddar cheese
salt
pepper
chili powder
salsa
sour cream

Directions:

Preheat oven to 375 degrees. Scramble eggs with a splash of water. Stir in salt, pepper, and chili powder to taste. Spray skillet with pan spray and pour in eggs. Cook over medium-high heat until eggs are done. Lay tortillas down on cookie sheet. Sprinkle a thin layer of cheese on each tortilla, top with cooked eggs, and then add another layer of cheese. Top each with another tortilla, and bake for 8 minutes, turning each quesadilla over after 4 minutes. Serve with salsa and sour cream.

Serve the quesadillas and muffins with pre-packaged fruit salad and orange juice spritzers (1 part orange juice/ 1 part seltzer water or sprite). Enjoy!
