Shopping list :
30 sweet sausage with no fennel
1/3 cup of quality olive oil
3 Cloves of garlic
Salt and pepper
20 Large yellow onions ( I prefer vadalia )
15 Green peppers
1/2 Cup of Parmigiana cheese ( Reggiano if available )
2 Large aluminum baking pans
Cooking :
Place sausage in baking pan side by side and in rows
Broil on high temp on top baking rack and keep close eye on links
Brown sausage on one side then remove from oven turn over and place back in oven till browned
While sausage is cooking prepare vegetables
Cut onions and peppers into strips about 4 inches in length by 2 inches
Place cut vegetables in baking pan
Finely chop garlic with 1 tsp of salt and cook in olive oil until lightly brown
Add 1/2 cup of olive oil and grated cheese to vegetables
Salt and pepper vegetables to taste and add cooked garlic
Mix vegetable mixture well and place in oven in middle rack and broil
Keep eye on vegetables and mix when onions get slightly brown on edges
Cook all vegetables until tender and still firm
After sausage is brown and almost fully cooked remove from oven
Wait for sausage to cool
With sharp knife cut sausage links on bias into about 1 inch pieces
Add Sausage to vegetables and cook together at 350 degrees for 30 to no more than 45 minutes
