Today Alaska's Salmon Muffins are featured. The basic recipe used for this muffin is the "Basic Muffins" recipe included in my article "Basic Recipes for State Muffins."

Salmon Muffins
1 batch of Basic Muffin batter
1/8 teaspoon black pepper
1 can (7 1/2 or 7 3/4 oz.) salmon, drained, skinned, boned, and flaked
2 Tablespoons minced fresh dill or 2 teaspoons dillweed
Prepare muffin recipe as directed, except decrease sugar to 1 Tablespoon, increase salt to 3/4 teaspoon, and add pepper to dry ingredients. Add salmon and dill with liquid ingredients. Makes 1 dozen. About 150 calories each.
