Alaska's Wild Salmon

Peter Stone
Salmon is one of my favorite fish dishes. I am always looking for new ideas and ways to prepare this fish. I found a distributor that shipped Wild Alaskan salmon. Wild salmon is always available at my local grocery-fresh or frozen. Even though, over half of the salmon available at seafood counters around the globe are from salmon farms.

The many online companies use overnight shipping including insulated shipping box, dry ice or gel-ice, and shipping insurance. According to the companies, all of the salmon is caught within Alaska's icy pure waters and 100% wild and natural. A Pacific salmon die shortly after spawning. Alaska has shores on two oceans (the North Pacific and the Arctic Ocean) and three seas. Alaska has 54,563 miles of shoreline. Salmon fishing abounds in Kodiak, Kenai, Copper River, Yukon River, Cook Inlet, and Bristol Bay.

Many companies offer a wide variety of salmon, including Copper River sockeye salmon, Yukon River king salmon, Alaska sockeye salmon, Coho salmon, and Yukon "Fall Chum" salmon. Yukon River king salmon has the highest Omega-3 oil content s at 20-30% of any King salmon. The varieties are abundant at different times during the year. Huge sales are available during the summer months, sometimes better than the local grocery.

The salmon can take many forms. I prefer fillets, and the delicious salmon burger meat. The burger meat is a great swap for turkey or beef burgers. They grill up brilliantly. The smoked salmon is wonderful in salads, salmon cakes, and pasta dishes. I also ordered smoked salmon jerky sticks, and salmon treats for my dog. I found the salmon dog treats in my grocery. Yes expensive because of the shipping, salmon was the best I tasted.

We've heard of the blackened salmon, grilled salmon with dill, salmon cakes, and poached salmon. I am a cook not a chef. I've come up with some recipes, measurements not precise. Please feel free to alter the ingredients and amounts to your taste buds.

Grilled or Broiled Salmon

1/3 cup each of Mojo Criollo marinade and orange juice

1/3 cup chopped cilantro

1 small cubanelle pepper sliced

1 chopped garlic clove

Mix all ingredients in a glass pan. Reserve about 2-3 tablespoons. Add 4 salmon fillets. Let stand 10 minutes.
Grill or broil until done. Pour reserve marinade over cooked salmon.

Serve with canned black beans heated with olive oil and garlic.

Bonte appétit.
