Almond Shortbread Cookie Cake Recipe

My mom loves shortbread cookies, so for her birthday her request was for me to make her shortbread cookies. I know quite a few different shortbread recipes, but I decided to do something different and add some zest of my own and make her a shortbread cookie cake with a hint of almond flavor.

Ingredients Needed:
Butter: 1/2 - 3/4 cup
Sugar: 3/8 cup
Pure Almond Extract: 1 teaspoon
Flour: 1 and 1/4 cup
Salt: 1/2 teaspoon
1 Egg

Preheat oven to 300 degrees F. Blend all ingredients together with an electric mixer. Blend until the mixture is smooth. Grease a flat pan with butter. Roll the mixture into a ball and flatten on to the pan. Shape the mixture into desired design and make sure that the mixture throughout is at least 1/4-1/2 inch thick. Place pan in oven and back for 10-15 minutes or untill edges are slightly browned. Do not over bake of the results will be too hard. It is normal for the center to still be light colored. Take out pan and let it cool for about 10 more minutes. Decorate the cookie cake with cookie icing if desired and enjoy!
