Amazing Whole Wheat Pasta Recipe that Everyone Will Love

I am on a constant quest to get my family to eat well, and to me it's an easy thing to implement. If you are in control of the ingredients you buy, then putting a healthy dinner together is no big deal at all. It can be easy and fun, you can add your own twists to really create a recipe that the whole family can get behind. Forget the no carbs, it's all about smart carbs and whole wheat pasta is just that. You don't have to deprive yourself of carbs or anything for that matter, but rather be smart about the choices you make. If you fill up a dinner with tons of veggies and lean protein, you've got a great balance and a hearty meal the whole family can enjoy. Here's something I put together for a delicious, low cal dinner.

In a skillet, you are going to gently sautee chopped veggies and onion. Start by putting olive oil in the pan and turn to a medium heat, add in chopped onions (1/2 to a full medium sized onion depending on your taste--we love the onions here!) and start to slowly sautee the onions for just a couple of minutes.

Next add in chopped veggies and make this colorful and fun, it's a great way to get your daily intake and use what your family likes. (or what they don't know they like yet) We usually go with a big mix that includes broccoli, tomatoes, zucchini, peppers, green beans, carrots--whatever you like! You can make a huge mix of veggies, and let them slowly sautee over a medium heat until the veggies get a bit softer. Add in 2-3 finely chopped garlic cloves towards the end of the cooking, if you add too early they will turn brown.

While the veggies cook, you can make a simple homemade tomato sauce. In a saucepan just combine a can of diced tomatoes, a half can of water, some additional garlic cloves (if you love garlic like we do), a handful of basil, oregano, salt and pepper, and for extra zest add in some olives. Mix everything together and cook over a low heat until it starts to bubble.

Once you've cooked your whole wheat pasta, add in the veggies, cover in the sauce, and garnish with a few sprinkles of low fat feta or parmesan cheese. We've also added cooked chicken strips for a bit more protein, or you can keep this more of a vegetarian dish if you'd rather..
